Ingredients : 

  • 600 gram noodles
  • 750 gram lamb backstraps, sliced thinly
  • 1 tbsp sambal oelek
  • 1 tbsp dark soy sauce
  • 1 tbsp fish sauce
  • 2 clove garlic, crushed
  • 1/4 cup (60ml) peanut oil
  • 1/3 cup (55g) coarsely chopped brazil nuts
  • 2/3 cup (160ml) beef stock
  • 2 tbsp oyster sauce
  • 2 tbsp lime juice
  • 2 teaspoon brown sugar
  • 150 gram sugar snap peas, trimmed
  • 1/3 cup finely chopped fresh mint
  • 2 fresh small red thai chillies, chopped finely

How to cook : 

  1. Place noodles in a large heatproof bowl, cover with boiling water; separate with fork, drain.
  2. Combine lamb, sambal oelek, sauces and garlic in a large bowl.
  3. Heat 1/2 teaspoon of the oil in wok; stir-fry nuts until browned lightly. Remove from the wok. 
  4. Heat 2 tbsps of remaining oil in wok; stir-fry lamb, in batches, until browned.
  5. Heat remaining oil in wok; stir-fry noodles until browned lightly.
  6. Add stock, oyster sauce, juice and sugar to wok; simmer about 3 minutes or until sauce thickens slightly.
  7. Return lamb to wok with peas; stir-fry until hot. Serve noodles topped with lamb mixture and sprinkled with nuts, mint and chilli.

Ingredients:

  • 4 (800g) lamb forequarter chops, fat trimmed
  • 2 eschalots, thinly sliced
  • 2 garlic cloves, crushed
  • 1 long red chilli, finely chopped
  • 1/4 cup crunchy peanut butter
  • 1 tbsp kecap manis (sweet soy)
  • 1 tbsp tamarind concentrate
  • 1 tbsp sweet chilli sauce
  • 270ml light coconut milk
  • 1 tbsp olive oil
  • 2 green onions, finely chopped
  • ½ large head cauliflower, cut into florets
  • Steamed sugar snap peas, to serve

 

How to cook:

  1. Preheat the oven to 180°C (160° fan-forced). Lightly spray a non-stick frying pan with oil and heat over medium heat. Add eschalots and cook for 3 minutes or until softened. Add garlic and chilli and cook for a further minute. Add peanut butter, kecap manis, tamarind and coconut milk, stir well and bring to the boil. Season to taste.
  2. Arrange lamb in a large baking dish, pour over sauce and turn to coat. Cook for 20 to 25 minutes or until the lamb is tender.
  3. Meanwhile, place cauliflower in a food processor and process until it resembles rice. Heat oil in a large non-stick frying pan over medium heat, add green onions and cook for 1 to 2 minutes then add cauliflower and cook for 3 to 4 minutes or until warmed through. Season.
  4. Serve lamb with extra sauce, cauliflower rice and sugar snap peas.

Ingredients :

  • 1 tsp peanut oil
  • 12 lamb chops, trimmed
  • 2 brown onions, sliced thinly
  • 1/2 cup crunchy peanut butter
  • 1/4 cup sweet chilli sauce
  • 2 Tbsp lemon juice
  • 2/3 cup coconut milk
  • 3/4 cup water
  • 2 Tbsp coarsely chopped coriander

How to cook : 

  1. Heat oil in a large frypan, cook lamb until brown or as desired.
  2. Remove lamb from the pan and drain excess fat.
  3. Add onion to pan, stirring until brown.
  4. Add peanut butter, sauce, juice and combined coconut milk and water.
  5. Cook, stirring until sauce thickens slightly.
  6. Return lamb to pan coat with sauce.
