Mozzarella di bufala is made from buffalo milk, while mozzarella fior di latte is made from pasteurized cow’s milk. Fresh mozzarella is generally white, but can be bright yellow depending on the diet of the cow/buffalo whose milk is taken. The texture of this cheese is soft and has a high water content.
