Merguez is a small spicy red sausage originating from the Maghreb.
The word Merguez comes from the word “mirqâs”, which indicated a sausage in medieval Berber-Muslim cuisine.
As a typical Maghreb product, the main ingredients of Merguez sausages are exclusively:
• Mutton and (or) beef;
• Sheep intestines for casings.
No less than 12 spices are added, such as: Sweet or hot pepper, Cumin, Paprika, Coriander, Ras al Hanout, Fennel, fresh garlic, etc.) Merguez sausages are typically used (just like Chipolatas) to be grilled on a Barbecue. But they can also be pan-fried quickly, so as not to dry them out too much.
