Since 1995, the companies STURGEON, ECLOSERIE DE GUYENNE, and more recently CAVIAR ET PRESTIGE have combined their know-how and expertise to produce and distribute a French caviar of the highest quality, the “Caviar d’Aquitaine STURIA”.
Their Aquitaine Caviar “Sturis” is well known as one of the best in the world. Its origin is unique – the gastronomie region of the South-West of France. ITs delicate salting allows full expression of the nutty flavor which rests long in the mouth. With its good-sized grains and it’s very fine skin colored from anthracite-grey to golden-brown, the Aquitaine Caviar “Sturia” will come as a surprise to the most demanding palates.
The sturgeon finally has existed for three hundred million years, well before the dinosaurs. There are still 24 species in the world, plus three related species (polygons, or spatulate fish); nearly all of them are endangered species. When adult, although some species grow no bigger than 90 centimeters, most get to 2 meters and at least 80 kilos. The beluga of the Caspian Sea is the giant of the family. It can get up to 9 meters long, weight 1500 kilos, ans live up to 100 years.
